A rich nutty topping balanced by a naturally sweet yet tangy filling
75g Quinoa Flakes
100g Nuts (almonds, walnuts), roughly chopped
50g Coconut, shredded or desiccated
150g Quinoa Flour
75g Rapadura Sugar
75g Vegetable Oil (preferably Grapeseed or Rice bran)
4 large Organic Apples, sliced thinly
½ Organic Lemon, zest and juice
1. Combine apples, lemon juice and lemon zest in an ovenproof dish
2. In a bowl, mix coconut, nuts, quinoa flakes and quinoa flour
3. Whisk sugar and oil together by hand, then mix into dry ingredients, rubbing in with fingertips
4. Sprinkle over the fruit, place on a baking tray, and bake at 180C until golden, and filling is bubbling (approx. 35-40 mins)
